So, unfortunately, the recipe that I’d planned on posting today is not yet ready for primetime. In its place, I offer my all-fruit green juice recipe. I’m unable to have traditional green juices, as most commercially available ones contain seaweed, which I’m allergic to. And while I don’t have a problem eating spinach and kale, the idea of drinking them is a bit much. This green juice is more like a smoothie, rich and creamy (but dairy-free!) with lots of “good fats” to help lower cholesterol. It’s also high in vitamin C, vitamin B12, potassium, and fiber.

Green Goddess Juice
- 6 medium ripe kiwi
- 1 banana
- 1-2 ripe avocados
- 1 quart coconut milk
- 1/2 cup lime juice
Halve kiwi and avocados. Remove pits of avocados, then scoop out flesh into blender. Repeat for all kiwifruit; discard skins. Peel banana, add to mixture in blender. Add coconut milk and lime juice; blend on high until all ingredients are thoroughly mixed and mixture is smooth. Juice can be stored in refrigerator for up to 1 week. Makes 1/2 gallon of juice.
